Buttermilk strikes a better balance between sweet and salty. They're fluffier, too!

Ingredients

  • 2 cup all-purpose flour
  • 3 tbsp sugar
  • 1.5 tsp baking powder
  • 1.5 tsp baking soda
  • 1.25 tsp kosher salt
  • 2.5 cup buttermilk
  • 2 eggs
  • 3 tbsp unsalted butter, melted, plus more for the pan

Steps

  1. In a medium-large bowl, whisk together all-purpose flour, sugar, baking powder, baking soda, and kosher salt.
  2. Make a well in the center, add the buttermilk. Slowly push outer dry ingredients into the buttermilk and stir until incorporated.
  3. Stir in eggs and butter.
  4. Set a skillet onto low heat, drop a small ladle of batter
