Matcha Cookies (flat version)

This version is lighter, with crispier edge but often a soft, warm center. For a denser Cookie’s cookie, try Matcha Cookies

Ingredients

  • 1 cup unsalted butter
  • 1-1 cup all purpose flour
  • 1 cup cake flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 2 tsp matcha powder
  • 0.5 cup granulated sugar
  • 1 cup light brown sugar
  • 1 tsp vanilla extract
  • 2 eggs room temperature

Steps

  1. Melt the butter in a medium sized pan or pot, then transfer to a heat-resistant bowl to cool. Let sit at least 10 minutes.
  2. Meanwhile, whisk flour, cake flour, baking soda, salt, and matcha powder together into another bowl.
  3. When the butter has cooled, add sugar and brown sugar. Whisk to combine throughly. Add eggs and vanilla. Whisk to combine throughly.
  4. Combine dry ingredients into wet ingredients about a quarter at a time, mixing with a rubber spatchula until combined each time.
  5. If using white chocolate chips, mix in to combine.
  6. Place batter in the fridge for 20 minutes.
  7. Preheat oven to 350F
  8. Remove batter from fridge. Line a cookie sheet with parchment paper.
  9. Scoop batter in slightly heaping tablespoon sized amounts onto cookie sheet.
  10. Bake 10-12 minutes.
  11. Remove and let cool on cooling rack 10 minutes before eating.
  12. Store in air tight container at room temperature or in the fridge for consumption later.
