Sesame Miso Roasted Red Cabbage

Excellent Side rich in nutrients

Ingredients

For Cabbage

  • 1 red cabbage, cut into 8 wedges
  • 2 tbsp rapeseed oil
  • 1 pinch sea salt and freshly ground black pepper

For Dressing

  • 1 tbsp fresh white miso
  • 1 tbsp mirin
  • 1 tbsp sake
  • 1.5 tbsp water
  • 1 tbsp sugar
  • 1 tbsp sesame seeds
  • 0.5 tsp roasted sesame oil

Steps

  1. Preheat the oven to 200˚C/390˚F/gas mark 6.
  2. Spread out the cabbage wedges on a baking tray, toss with the oil and season lightly. Roast in the oven for 30 minutes.
  3. Meanwhile make the dressing by whisking together all the ingredients.
  4. Once the 30 minutes is up, use a pastry brush to coat the cabbage pieces in the dressing then turn the oven up to 240˚C/465˚F/gas mark 9 and return them to the oven for a further 15 minutes until cooked through, caramelised and beginning to get a little crisp at the edges.
