Simple, healthy and delicious breakfast sandwich that can be stored in parts for meal prep
Ingredients

lb 95% lean ground turkey

tsp fine salt

tsp garlic powder

tsp fresh sage, finely chopped

Steps
soft boiled eggs
Add cold water and lots of ice to a small-medium bowl.
In a large saucepan, add enough water so the eggs can be submerged. Do NOT add the eggs yet. Bring to a boil.
Once the water boils, carefully place eggs into the saucepan with tongs or using a strainer. Let boil for exactly 6 1/2 minutes. Submerge in the ice bath once done.
While waiting for the water to boil, begin with the turkey patty’s below.
Turkey patties
Meanwhile, combine spices and ground turkey into a medium bowl using your hands.
Place a medium non-stick pan over medium-high heat.
Spray pan with cooking spray and make a 4-inch ball from the grouped turkey. Throw the ball down onto the pan and flatten with a spatula.
Cook for 2 minutes, flip and cook for another 1-2 minutes.
Sandwich assembly
Toast 2 slices of bread.
Place patty onto one slice.
Cut the egg vertically and place each half on the patty.
Top with second slice, cut in half so that the eggs are cut horizontally.
Meal Prep
Eggs and sausage can be refrigerated. When ready, microwave the sausage and peel the egg. Toast bread and assemble as usual.
